Fruity notes are intermingled with softer creamier notes of vanilla, coconut, or even white chocolate. Despite its advanced age, it is anything but a dry earthy twig. This tea remains at \u003c\/span\u003e\u003cspan class=\"s1\"\u003ea transformative moment filled with honey cream and milky sweetnesses.\u003c\/span\u003e\u003cspan class=\"s1\"\u003e\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe liquor is a clean yellow gold which can darken if steeped at length.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe Ling Family has been making tea for generations, transitioning from jasmine production to white tea production in the early 2000's like many Panxi locals in the core Huanggang Village. They store their white tea under wetter conditions than the Yuanming Garden Tea Factory, and rebaked this tea in 2021. An increased moisture content affects flavor in so far as boosting the fruity or chocolatey dimensions of the tea, with the disadvantage of some more tartness than a drier storage would provide. harvests and tree ages.  We had our Laotian partners pick some of their 400+ year old trees last Autumn for a very special all-gushu premium tea cake.  However, after picking and processing, the border between Laos and China closed.  Thus, our farmers were sitting in Laos with all their tea, but no one to sell it to.  Additionally, as they survive on selling tea, they had very little business to sustain themselves.  So this spring, we decided to increase our initial order and create a blend of Autumn Gushu and Spring Cultivated tea trees.  The results are spectacular, we have a cake that exemplifies the best of both worlds, the calm sweet and mineral influence of the gushu compounded with the punchy, thick, viscous new bush gives this tea something that the \u003ca href=\"https:\/\/onerivertea.com\/collections\/pressed-tea\/products\/2021-autumn-laos-gushu-sheng-puer\"\u003eall-gushu 2021 cake \u003c\/a\u003edidn't have.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eThe appearance of the cake is quite complex.  There is a mix of thick gushu stems, a few large Huanglian, and a decent amount of silver buds.  The cake is more loosely compressed than that of the 2021 gushu puer, and breaks apart very nicely.  As this tea is harvested some 20 kilometers from the boarder with China's mountainous Yiwu region, the characteristic of this tea has a lot of those found in Yiwu: namely a soft and sweet nature that isn't as intense as some other puer regions.  \u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003c\/div\u003e\n\u003cdiv\u003eThe aroma off the wet leaves is a bright citrus that is not without healthy vegetation notes.  When brewed, the liquor is a bright cold, and the brew coats the tongue very evenly delivering a very pleasant and deep huigan.  \u003cspan data-mce-fragment=\"1\"\u003eThere is a decent amount of honey notes in the brew blended with some strong flower fragrances like that of rose or fresh iris.  There is a distinct creamy note to the liquor as the brew count climbs, the heavy floral notes fade to be replaced with a soft, buttery sweetness.  As with out 2021 Laos Puer, we are very excited to see how this cake tightens up and. vanilla aroma perfectly backed by hidden floral notes, like a bouquet of dried flowers in an old library.  The brews themselves are thick in the mouth and mineral rich, while the empty cup is long tracks.  Sometimes the aromas of the leaves rise and rise in fragrance until the tea almost entirely drifts away.  These teas are all about the nose and the upper palate and pass through the body like water. \u003c\/span\u003e\n\u003cdiv\u003e.\u003c\/div\u003e\n\u003cdiv\u003eThe 2013 Shoumei takes another track.  This tea sinks down into its mineral roots as it ages, all sweetness is locked tight, but still present, under the oily coils of earthy notes.  As the session lengthens, the root coils give up their sweet prize and after every sip is the dried date and flower fragrance one would expect in an aged white peony.  This tea sits heavy on the tongue and delivers a profound huigan.  The qi of this properly made and aged shoumei hits us like a tidal wave, and is warm and soothing in our stomach.  We don't often talk about the qi of a tea, but when brewing this tea, we find ourselves sitting longer and longer before infusions at rest, our thoughts drifting this way and that like Lu Tong by the end of his poem \"7 Bowls of Tea.\"\u003c\/div\u003e\n\u003c\/div\u003e\n\u003cdiv\u003e.\u003c\/div\u003e\n\u003cdiv\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003c\/div\u003e\n\u003cdiv\u003eAs many know by now, we have a healthy mistrust of aged white tea cakes.  After living in China for so many years and frequenting the Fuding fresh leaf and processed tea wholesale markets, we have seen too many fake aged white teas.  This tea however, while the origin is unverified by us, has been curated by Mr. Qiu who has exquisite taste and skill in identifying picking grades, tea types, and general quality of Fuding White Tea. There are a few tell-tale signs that this tea is indeed as old as it claims: First and most apparent is the amount of orange and brown tea buds.  These silver buds are the slowest to transform with time, and only begin to change their color after 7-9 years of age.  The second defining feature is the actual texture of the leaves, as they are handled, they begin to fall apart into powder, this is one of the main virtues of pressing teas like this, for a loose tea of this same age would be all broken bits of leaf and a lot of tea dust. of Anhua Heicha production is being carried out by mega-factories and huge companies, Mrs. Huang represents the small minority doing things the old-fashioned way.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eHer mountain is in Dafu Village of Anhua, Hunan, and the tea she harvests comes from hidden groves within, all of which have been nearly forgotten and left to grow wild.  This tea is the careful production of a small team, and the attention to cleanliness, quality, and detail is unparalleled in anything we have seen in Anhua thus far.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eWhen the dragonball is placed into the warmed gaiwan, we are greeted with the sharp spice of freshly cracked black pepper backed by something richly vegetal.  The medium to light fermentation can be seen immediately after the first rinse, the green leaves give off a deeply umami aroma of pinesap and cedar wood.  The resinous wood fragrance of the leaves persists through the entire session, perfuming the tea table every time we lift the lid to add more water.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eThis tea brews up a deep viscous gold, and is incredibly thick and pleasant on the tongue.  After only a few infusions it can produce a profound huigan, and lingers in the back of the throat.  The infusions ride an interesting line between deeply earthy textures of wood, leather, and tobacco and a greener side of vegetal notes, such as spinach and nettle.  While this tea is pleasantly soft when brewed fast, it has the power to become strong and slightly astringent if it is overstepped.  This slight few broken bits.  The leaves themselves are very dark with a lot of large stems, supposedly adding sweetness to the aging tea.  Breaking up some of this tea, we saw little to no 'golden flowers' as is smaller pieces to facilitate an easier brewing experience.  Trace patterns which were pressed into the original brick can be seen in these small checker-board pieces, a Chinese character here, the elevation there, the rigid fingerprint of a topographical map.  We have yet to buy a full cake, so are unsure as to their original pattern when pressed.\u003c\/p\u003e\n\u003cp\u003eThis cake has been described by Mrs. Huang as a tea that is good for people who don't like Anhua Heicha.  We feel however, that it is fairly characteristic of the style, the only difference is that it has significantly less bitterness than other Anhua Dark Teas.\u003c\/p\u003e\n\u003cp\u003eWhen warmed in water, the leaves exude a deeply meaty aroma.  We are reminded of honey glazed ham, smoked meat, and general sweet barbecue.  The liquor however is a clear light amber (much cleaner than the Seven Bowls' Huazhuan counterpart).  After a few infusions, this meatiness transforms into a deep vegetation.  There is still a pleasant amount of bitterness which will fade with time, though this tea is undeniably bright, with notes not found in a lot of other Anhua Dark enchanting, rich deep with layer upon layer of savory herbal notes that twist through a background of old wet wood.  We found our selves absentmindedly smelling the teapot between infusions until the tea in the cup was cold.   \u003c\/p\u003e\n\u003cp\u003eThe tea itself is a perfect example of what excellent source material, ideal storage conditions, and proper aging can create in the space of Anhua Heicha.  It is rich, thick, meaty, textured, and deeply complicated.   For us, the energy of this tea after the first few infusions really transported us into a blissful contemplative state, truly a tea worth the time and space it deserves.  While Anhua Heicha can be dirt cheap in huge quantity, the small amount of excellently produced aged tea is rare and well worth the rather high price our way to the Bangdong Village to check out their grove of Gushu trees (See the NYC Tapwater cake), we passed though the smaller village of Matai, or Horse Terrace.  Lanjie mentioned that this has some of the best white tea in Eastern Lincang and described the thick silver needle, the fuzzy buds, and the melon taste to the tea.  While we skipped pressing it last year in favor of the Kuashan Shoumei material (See the Forbidden Fruit cake), we were excited to get our hands on some of this excellent white tea this year.\u003c\/p\u003e\n\u003cp\u003eAs the leaves are so fuzzy, this tea takes some time to get going, delivering a few lightly colored sweet-water infusions before finding its true stride around the third infusion.   That said, the leaves on the first few infusions smell like walking through a fruit market in spring, there are melon fragrances mixed with mint and thyme, a little sweetgrass and cedar wood mixed in there.  Every time we open the lid of the gaiwan, we can't help but smell the leaves.  As the session progresses, the leaves begin to exude more and more cracked black pepper and thick rose fragrances.\u003c\/p\u003e\n\u003cp\u003eThe brew begins to thicken up, while remaining a clear pale gold.  After a few infusions, this tea begins to coat the mouth and leaves a pleasant oily sensation on the tongue.  The tea retains a lot of high notes in the mouth despite the heavier fragrances issuing from the cup.  After a few more infusions, we forget to count, we realize how long-lasting this tea is, providing brew after brew of clean golden infusions, it's very difficult to oversteep, and so far we have not managed to steep this one out to completion.  Drink it fresh, or see how it matures with age.\u003c\/p\u003e\n\u003cdiv\u003e\n\u003cp\u003eWe more personal facility, and its flavors will change more dynamic over the next few years.  While this tea will start out very fresh and vegetal, in as little as 6 months of aging, the vanilla notes should begin to shoulder aside some of the more green vegetal nature of this young tea.\u003c\/p\u003e\n\u003cp\u003eThe pick of this tea is very bud-heavy with a fair bit of longer stems seen in the cake.  We love seeing these stems as they are what will give this tea its sweetness in the years to come.  If you're not a fan of stems, check out the silver needle, though expect a much more dryness of cream, that is sweetened by the slightest hint of vanilla wafers.  A majority of this session stays vegetal and complex without betraying hints of flowers that we find in the Da Baihao cultivar.  We are excited to see the thick mineral depths this tea acquires as it ages.  Already this tea sits pleasantly in the stomach and has a modest, relaxed energy about world of Fuding White Tea, there has been a great reverence placed upon the village of Panxi, a small area between Fuding proper and Taimushan, a village isolated from the coast by mountains and rented a car and drove up to the cozy little village ourselves this summer searching for some aged panxi white teas.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThis tea comes from a mountain top above Panxi, the Huanggang Village.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe makers have a small, tidy factory and produce and modest amount of tea every year.\u003cspan with time.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWe have long been fascinated by this progression, and are always very eager to find good examples of teas at different states in their transformation.  One rather fascinating, or complicating, factor to this is the fact that in the past decade there have evolved two camps in white tea production, particularly for shoumei: one brown, one green.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe green shoumei, where each dried and processed leaf of tea is as green as it was when still on the bush, has long been the ideal to strive for when making white tea.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThis ideal has been further actualized by modern technology, equipment, and a more scientific understanding of the withering and drying process.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eFast forward several years, we are at a point in time where we can assess the pros and cons of making a green or a brown shoumei with one key question in mind: will it age well, or does the browning of shoumei create an inferior tea that does not hold up when examined through the lens of long source of these tea leaves and follow their transformation step-by-step to ensure authenticity of origin and production, what we did was follow the big names.  The three tea houses we included in this sampler have been around for almost a hundred years each!\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eFukien Tea Co.\u003c\/strong\u003e currently run by Patrick Yeung has been around for over 70 years in the Sheung Wan district.  Like some of the best tea makers on the mainland, Fukien is a generational tea house, meaning that its stewardship goes back three genereations.  They specialize in personally roasting their deep roast oolongs.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eGeow Yong Tea Company\u003c\/strong\u003e is also located in the Sheung Wan district and was founded in 1842 in Taiwan during the Qing dynasty.  Boasting a 180 years of tea making history, they are the oldest company we sourced from this trip.  While they also specialize in roasted oolongs, their processing is a little different, with three roasts and three rests instead of one ultra long roast.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTong An Tea Company\u003c\/strong\u003e, formerly Bao Lan Sheng, was founded in 1915 by Mr. Li Xie.  This 100+ year old tea company specializes in aging teas, primarially Puer and Liu Bao.  They are intangible cultural inheritors of the now classic
