brewed, the wet leaves are incredibly rich vegetal umami fragrance while still being backed by toasted nut aromas.  Compared to last year, this tea is more lightly roasted which lends itself to its namesake, the Apricot Kernel Fragrance, or the honey-baked almonds we see served with tea all throughout China.  The session begins thick and heavy with a good deal of warm toasted notes in the brew, but midway through the session the herbal, floral, spice notes peak in a confluence of rosemary and other fragrant kitchen herbs.\u003c\/p\u003e\n\u003cp\u003eAs the brews continue, the light amber liquor sweetens even further with a hidden characteristic of dried apricots and rosemary.  There is a thick mineral note to this tea that coats the tongue and delivers a pleasant huigan.  The empty cup aroma is one of buttered toast.\u003c\/p\u003e\n\u003cp\u003eA note on names:\u003cbr\u003eIn the big book of Dancong tea varietals, written by a long-time Phoenix Village tea producer, there are over 200 dancong varietals listed, among them are several in a family dubbed 'almond fragrance.'  Among these dancong varietals are found the 'peach kernel fragrance' and the 'apricot kernel fragrance.'  As both these fruit kernels yield a type of almond, these dancong varietals are often mistranslated as simply 'almond fragrance' which in truth can refer to half a dozen different interesting Dancong Oolong varietal.  Originally cultivated during the Maoist Era, the name itself comes from a famous revolutionary song.  \u003c\/span\u003eWhile this tea is often grown and sold as a gift tea, the quality of this less-common varietal is always stunning for us.  On Wudong Mountain, this cultivar is one of young maker Wen Zitong's favorites, when visiting neighbors in the village, he would always request to try their East is Red, this tea has a lot of local fame and appreciation.\u003c\/div\u003e\n\u003cdiv\u003e.\u003c\/div\u003e\n\u003cdiv\u003e\n\u003cp class=\"p1\"\u003eOne of the most often requested dancong oolongs is this East is Red, or Dong Fang Hong.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eTypically represented as a more traditionally roasted dancong, there are many good examples of this cultivar on the market, so there is little surprise that it has such a cult following.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe leaves in the warmed gaiwan reveal a slight note of sage, fresh spices beneath the buttery toasted notes of the most recent roast.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eDue to the seemingly endless typhoons plaguing the southern coast of China this year, Wen Zitong took his time giving these teas their final roasts to ensure no enduring moisture in the leaves.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe tea I tasted after its second roast and before the final roast was a symphony of vegetation, rock minerals, and buttery sweetness, however, it washy yet the traditionally roasted tea we would expect from a Dong Fang Hong.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eWhen infused with water, the leaves shrug off their recent roast (we are drinking this tea just weeks after the final roast, and the leaves have not yet rested properly, in a few months time, the roast and the leaves will have emulsified into one uniform flavor).\u003cspan time.\u003c\/p\u003e\n\u003cp\u003eDuring the Maoist Era, all the villages in the present day Phoenix Township of Eastern Guangdong were organized into a single massive commune － for two decades this commune  produced virtually all of China's  Dancong Tea. Although the commune has been defunct now for almost forty years and many of the innovations of that time (including dual-hand picking) have largely disappeared, one tea variety has stood the test of time: \"Dongfanghong\" AKA the East is Red.  This tea was first developed and produced commercially during the height of the Cultural Revolution and has remained in production ever since, though grown examples of a Baxian Dancong Oolong we have ever come across.  Made of exclusively high-mountain material, from 50+ year old un-pruned trees, it has that characteristic \"laocong\" or \"old bush\" aroma and taste.  On top of the excellent source material, this tea has been slowly and expertly roasted by our master Wei over a series of months, giving it a deeply permeated roast that never quite dissipates.  In addition to, and perhaps in testament of, this exquisite processing, this tea has matured over the past 4 or 5 years into something unlike any other Dancong Oolong we have tried.  The roast has turned into a chocolate aroma redolent of finely processed Rougui Rock Oolongs, though the body of the tea remains distinctly dancong.\u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe aroma off the wet leaves is instantly savory, a perfect balance of vanilla and toasted wood with the sweetness of cocoa hiding in the background.  The liquid brew retains a dusty gold throughout the infusions, though is viscous and clean.  On the tongue this tea is thick and heavy, coating the mouth and leaving a deep huigan.  This tea settles very comfortably in the stomach and it is here that the true joy of this tea takes shape.  After a few infusions of this tea, we feel warmed and contented, truly this tea is dancong cultivar we have been trying to find a good example of for years.  The first time we had this cultivar, we were blown away by the sweet mix of spices and flowers in the nose and on the tongue, but a lot of the expressions in years to come were slightly lacking, until now.  These past few years, we have been happy to say we have found a beautiful example of this cultivar from our makers up in \u003cem\u003eDa'an\u003c\/em\u003e just North of \u003cem\u003eWudong\u003c\/em\u003e Mountain, their trees are all \u003cem\u003eLaocong\u003c\/em\u003e, or old bushes, and the garden is governmentally protected from all excesses of chemical fertilizers and pesticides.\u003c\/div\u003e\n\u003cdiv\u003e.\u003c\/div\u003e\n\u003cdiv\u003eThe leaves are a little larger this year than the Night Bloom Fragrance from the year before, but the fragrance is right on the nose of what we remembered it to be.  The smell off the dry leaves in a warm gaiwan is divine, a mix of honey-glazed bread and stewed oranges with something peppery hiding in the background.  When brewed the cinnamon notes and vegetal spices rise to the top of the wet leaves with a buttery background of flowers.  The brew itself is a rich gold hue. \u003cbr\u003e\n\u003c\/div\u003e\n\u003cdiv\u003e.\u003c\/div\u003e\n\u003cdiv\u003eWhile the fragrance of the leaves start off very fruity and sweet, this tea brews up quality meets our standard.  We had a lot of teas during our weeks in Wuyi, and thisR stood with the best of them.\u003c\/p\u003e\n\u003cp\u003eThe aroma off the leaves is chocolatey sweet, when brewed, it exudes slightly spicy notes of cinnamon toward the ends.  There is a slight pine resin and woodsmoke on the leaves as well.  The brew is immediately thick in the mouth, with strong mineralogy noticeable on the tips of the tongue.  The brew stays consistent for six or even seven infusions, getting very thick around the third, and very sweet toward the Reserve.  While very little tea is gets made from the mother bushes, the legacy of this varietal has been exported far and white, and many producers make their teas in this well-roasted, mineral decade ago and aged in his Wudong mountain warehouse, this tea demonstrates what a high-quality dancong tastes like once it truly becomes 'aged tea'.\u003c\/p\u003e\n\u003cp class=\"s2\"\u003eIn our exploration of aged teas, we have had a few very old teas from Lin at the base of the mountain range (1980's 1990's), and a few younger ones from Wei up in the slopes (2016 baxian).  While the very aged dancong's exhibit evidence of poor storage and have a lot of damp notes to them, the more recently aged dancongs seem very slow to mature.  While a lot of producers will mellow out their nice teas for a few years, to get a tea over 10 is still a rare discovery for these high-mountain makers.  While the 2016 dancong tastes lovely, mellow, and relaxed, the 10 year dancong stands just on the other side of the 'aged tea' threshhold.  While the floral and fruity notes are still present on the nose, things take a turn once the session begins.\u003c\/p\u003e\n\u003cp class=\"s2\"\u003eThis tea serves as an interesting counterpoint to the 2009 Shuixian from the Wuyi mountain range, as Dancong oolongs are notoriously more fragrance-foreward, we get a lot of complex aromas on the warm leaves with that lingering backbone of aged oolong aroma lingering somewhere in the depths of the gaiwan.\u003c\/p\u003e\n\u003cp class=\"s2\"\u003eThis tea is surprisingly sweet, as the leaves open up we get hit with fruit and berry aromas mixed with an earthiness that reminds us of sugar soaked hookah tobacco (shisha).  The taste on the tongue however shows off the age, for instead of showing recent roast, which should melt into something creamier as the roast settles into the leaves over the next few months.  As soon as the leaves are hit with hot water, they exude a berry skin fragrance mixed with something more vegetal like sweetgrass or even stinging nettle.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe brew is a rich gold, which shows that the roast isn’t so heavy, preserving more of the leaf fragrances and flavors.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eEvery year we find one dancong that tastes pleasantly fruity to us with sweetness like candy, often resulting in the jolly-rancher tasting note.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eWhile there is still too much of the recent roast on this tea to tell yet, we are getting the edges of this fruity sugar candy note in this year’s Ba Xian. \u003c\/p\u003e\n\u003c\/div\u003e\n\u003cdiv\u003eThe taste on the tongue is thick and grounded, offering less sweetness than last year's Ba Xian, but much more minerality.  The most exciting part about this tea for us, is how it performs in the cup.  The fragrances take a backseat, and we are left with the physical presence of this weighty tea on the tongue, coating the mouth, and sitting warm and pleasant in our stomachs.  Toward the end of the session, the minerality gives way to a delicate sweetness, like drinking the brew.  While the light roasting makes an appearance in the first half of the session, it is the long lingering second half this tea has to offer that we value.  The empty cup aroma of this tea aromas we smell on the leaves is wonderfully reflected in the brew itself, in fact there are even more nuanced and complex flavors in the liquor than we can pick up in the aroma alone.  If pushed, this tea can become thicker and stronger without falling off a bitter cliff.  This is a tea we are loath to part with, so set aside a good bit of time for the tea session, as this tea has endurance seven years frequenting the phoenix mountains.  This cultivar is probably the easiest to recognize, but the hardest to hit that qunitessential blend of powerful floral fragrances mixed with mineral sweetness.  However, over the past few years, we have found that the traditioanlly roasted Milanxaing from Mrs. Chen hits that mark like a something more floral hiding in the background.  As with most heavy roasted oolongs, this fragrance transforms into something more akin to pinesap and roasted cedar when first infused with hot water.  Since this tea is so expertly heavy roasted, it will do best with a few more months of rest before the roast really melds with the leaves.  That said, it is still a pleasure to drink at the apparent in this tea from the first We have worked with Master Wei longer than any other dancong oolong maker, having first met him in Autumn of 2017.  He is a reticent, soft spoken maker with a keen eye for details.  His most expensive teas are often very lightly processed, allowing the leaves to show their true nature.  This single-bush Orchid Fragrance was sent to us as a gift for the Mid-Autumn Festival, and it was so good, we had to buy up the last of his stock and include it in this dancong release.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eSingle Bush, or Danzhu, means that all these leaves come from a single tea tree.  Wei told us that this Zhilan Xiang tree can make about 3.5 kilograms of tea per year.  As we were a little late in the season to buy it, he only had 1 kilogram left to sell us, so this tea is extremely limited.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eThe tea itself is on the lighter side of the roast scale, which suits this cultivar very nicely.  When the dry leaves are placed in a warm gaiwan, they exude a sweet buttery fragrance.  This quickly changes to a potpurrie of dried flowers with a hint of cooking spices when infused with hot water.  But by and far, the most interesting part about this tea is the tea soup and the brew itself.  \u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eThe brew itself is a light pale gold that looks ordinary enough except for its clarity and purity of color.  Even after drinking the rinse (yes, we drink the rinse for these danzhu and mother bush teas), while waiting for the kettle to heat up for the second infusion, our tongue is already coated with tea oils and beginning to tingle as we salivate.  These kinds of inexpressible physical sensations are part of how we identify old bush flavors, a kind of mouth watering sensation that happens after we begin drinking these ancient and deeply-rooted tea trees.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eA few infusions in, the taste of the tea is light and clean, but without a rollercoaster of fragrances and nuances.  This again is on-par for our experiences of Danzhu and Gushu teas, the really remarkable reason these teas are so prized is less about their Zitong's Orchid Fragrance Old Bush).  The brews are very thick in the mouth and oily on the tongue while providing a lovely mineral depth.  As the session continues, the brews become sweeter and sweeter, and can easily brew a liter of tea, necessitating us to refill out kettle toward the end of the session.  The sweet tingling sensation on the tongue lasts hours after each session for China.  While it owes a lot of credit to its interesting name, it's a reliably savory and creamy dancong oolong that showcases the more vegetal side of dancong oolong, making it more appealing to those in nearby Xiamen who guzzle down gallons of Anxi Tieguanyin daily.  Before you ask, no, it does not smell or taste like Duck Shit, that name is more of an inside joke amongst farmers on the mountaintop.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eWhen the dry leaves are placed in a warmed gaiwan, we are met with the toasted buttery aroma of baking croissants mixed with some floral aromatics we usually pick up in the Milan Xiang.  Once infused, these leaves take on a more vegetal note of fresh cut grasses and spring violets.  The brew is a pale gold, and the taste is sweet and refreshing.  Although it is more roasted than the \u003ca href=\"https:\/\/onerivertea.com\/products\/bee-balm-milanxiang-dancong\"\u003eMilan Xiang Maocha\u003c\/a\u003e in the Bee Balm cake, the nature of these leaves are intrinsically lighter than that of Milan Having been roasted, this Zhangping Shuixian does not have the same refreshingly green and crisp body that would normally be expected with this tea. However, it is also not remotely as roasty-toasty as most Shuixian from Wuyishan. years in the Sheung Wan district.  Like some of the best tea makers on the mainland, Fukien is a generational tea house, meaning that its stewardship goes back three genereations.  They specialize in personally roasting their deep roast oolongs.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eGeow Yong Tea Company\u003c\/strong\u003e is also located in the Sheung Wan district and was founded in 1842 in Taiwan during the Qing dynasty.  Boasting a 180 years of tea making history, they are the oldest company we sourced from this trip.  While they also specialize in roasted oolongs, their processing is a little different, with three roasts and three rests instead of one ultra long roast.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTong An Tea Company\u003c\/strong\u003e, formerly Bao Lan Sheng, was founded in 1915 by Mr. Li Xie.  This 100+ year old tea company specializes in aging teas, primarially Puer and Liu Bao.  They are intangible cultural inheritors of the now classic
