 Tea at this age point have begun to come full circle, reclaiming their once fresh floral notes, but in a mature way similar to potpourri, while still retaining its sweet vanilla friend Wu in Fuding's Guanyang county to help us press a small collection of 100 gram tea cakes both in the green and the brown style.  It was after all Wu who first turned us onto this growing phenomenon.  Often called the \"New Processing Method\" or the Xin Gongyi 新工艺 makers of White tea have recently gone out of their way to take the fresh green leaves of white tea and process them to look brown and aged. \u003c\/p\u003e\n\u003cp\u003eWhile this does change the flavor into something more iconically recognized as shoumei (read: woody, sweet, earthy), it loses the natural vegetal freshness that green shoumei has.  The reason for this is a complex interplay between market expectation and farmers incentives, it's easier to sell brown shoumei as aged tea, even if it is fresh!\u003c\/p\u003e\n\u003cp\u003eAfter Wu brought this to our attention, we wrote a \u003cmeta charset=\"utf-8\"\u003e\u003ca title=\"Green Shoumei vs Brown Shoumei\" href=\"https:\/\/onerivertea.com\/blogs\/one-river-tea\/the-browning-of-white-tea\"\u003eblog post\u003c\/a\u003e on it, talked about it on the podcast, and created out very first educational tea sampler: The Browning of Green Shoumei.  This realization shook us, because it brought up the question, just how many of the \"old shoumei\" teas we were drinking were actually processed to look old with boiling water.  The Mudan Wang on the other hand is a full gale of spring flavors tied together with a deep huigan, a thick golden liquor, and a savoriness fit to match any umami-rich green tea.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe Fuding White tea selections in this box all come from a beautiful garden in the costal and mountainous village of Panxi, located inland of from Fuding proper.  This is one of the three main villages to produce Fuding White Tea, and while the others (Taimushan, Diantou) have a longer history of tea production, the dedication of Panxi farmers, and the purity of the land cause most tea connoisseur in China to believe that the best white teas come from Panxi.  \u003c\/span\u003e \u003c\/p\u003e\n\u003cp\u003eWe recommend brewing 6-7 grams of As Master Bao recounts, almost all the flattened, wok-fried green tea in their village is marketed in neighboring Zhejiang Province as Dragonwell.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eShucheng Orchid Green(20g)\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eA happy medium between Maofeng and Anji Baicha, this tea offers the creamy, delicate floral notes of Anji Baicha, while also delivering the heavier body associated with more premium Anhui green teas. The Shucheng area's unique baking and shaping process produces a tea that is vibrantly verdant and fresh.\u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eFirework Rain (20g)\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003eA light and delicate green tea made of the Longjing #43 cultivar. From Derek’s tea master Yin Wei, this tea has none of the toasted chestnut fragrances associated with dragonwell, instead has a bouquet of spring flowers, baked cake, and cream. This is some of the best tea made in Yangzhou, matching his vision of \"Firework Green.\" It for more delicate and grassy than many other local teas. It has that unique fig pastry aroma, but an even more pleasantly sweet flavor and chalky body that can only be described as marshmallow.  \u003c\/p\u003e\n\u003cp\u003e\u003cb\u003e1 Infusion Freebie - \u003c\/b\u003e\u003cb\u003e\u003c\/b\u003e\u003cb\u003eDuyun Maojian (6g)\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003eIn the same genre as Ganlu or Biluochun, this is a wok-fried and finished green tea. Duyun Maojian is our first-ever tea hailing from Guizhou Province - it is a fragrantly robust, vegetal treat appropriate for a later pick.\u003c\/p\u003e\n\u003cp\u003eHaving been plucked after April 4th, these teas are all Minghou picks that are excellent in every other respect. All of these teas look and taste great while also staying true to official processing standards. Here is a chance to get several infusions' worth of these well-loved teas at a reasonable price. The best defense against “green debt!”  \u003c\/p\u003e\n\u003cp\u003eOf all these teas, the Firework Rain, Shucheng Orchid Green, and Anji Baicha are perhaps the most appropriate for Gongfu-style brewing. Unlike your average neighborhood Maojian, the green tea in this sampler was all picked from local heirloom varietals. The first four orders will also contain exclusively Maojian that we picked and sorted ourselves. \u003c\/p\u003e\n\u003cp style=\"font-weight: 400;\"\u003eHefeng Red is a modern spin on Hubei’s OG black tea for export, Yihong. It is picked a month later than the Maojian from the very same heirloom bushes. Like most black teas in China today, it is a relatively sweet, mild black tea that is less oxidized and more visually appealing than past generations of Lipton-like bagged tea. This a perfect red tea to drink gongfu style at night when you want some natural sweetness and stomach relief without too much of a caffeine rush.\u003c\/p\u003e\n\u003cp style=\"font-weight: 400;\"\u003eHefeng Shaigan is a re-creation of what tea used to be in Hefeng before the 1990’s. It starts out with the same pick and initial steps as Maojian, but it is not kneaded fully and dried by sunshine rather than a modern oven. Tea is no exception. The Dianhong style of tea which started in the 1930’s as a replication of the export-oriented tea that was being produced in Hubei and Sichuan, has now become as much of a staple of the Chinese tea market as Puer. The characteristically large leaves, usually picked from mature trees, offer a uniquely arboreal flavor. Orthodox Dianhong today now usually seeks to deliver sweetness and a milder level of oxidization at a low-low price. Our Dianhong is exactly that, and produced from old growth trees. By contrast our Laotian Red tea is a recent, somewhat experimental product that has been inspired by Dianhong. It is rougher in flavor and appearance, but also captures that nice woody almost cedar flavor in a way that some Dianhong’s do not always deliver.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e \u003cstrong\u003eLichuanhong \u0026amp; Old Path Yihong \u003c\/strong\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eYihong was one of the first red teas outside of Fujian to be produced on a commercial scale outside of Fujian. These two Hubei red teas are sourced from Lichuan and Hefeng, two counties that can truthfully say they have been producing Yihong for at least one hundred year. Just as Dianhong copied Yihong, Yihong in turn was an imitation of Lapsang. It was never smoked, but it was heavily oxidized and cut just like the Fujian original. That old style of Yihong largely died with state-owned tea factories in Enshi and Yichang in the 1990’s. Lichuanhong and Old Path Yihong are two independent re-imaginations of Yihong. The former uses a specialized cultivar derived from past generations of Yihong production, but it abandons completely the traditional production method; Old Path Yihong is the exact opposite. The former product is, as the name implies, a tea picked and processed in the style of the autumn white tea grown in Fujian. 2-3 larger leaves and bud of the handsome Echa varietal were picked from the plot directly behind the Loushui Cooperative Factory.  White its gentle huigan and notes of fennel, asian pear, and pollen, this tea is more delicate and mild than most Fuding Shoumei teas made with the Dabai varietal.\u003c\/p\u003e\n\u003cp\u003eThe autumn pick Shaigan was much more authentic than the Spring version we had made previously. It was fried, kneaded, and sun-dried without any equipment unavailable in the 1970's. The original wooden tea kneading basin used by the Wuyang Commune was brought over and cleaned for the occasion. The pick was also far later and rougher than the Shaigan we produced back in May. The resulting tea is sharp and grassy, with an almost overwhelming toasted rice flavor. We may not try to make it again this late in the year, but it is worth appreciating as a historial re-creation.\u003c\/p\u003e\n\u003cp\u003eIt is an especially fun ride to enjoy the Shaigan back-to-back with the fruit of modern mechanization that is Hefeng Maojian. Just like the Hefeng Shaigan and Hefeng Shoumei, it was produced from the Provincial Echa cultivar, however it was produced earlier in the year with the assistance of a modern kill-green tumbler, kneading machines, straighteners, and an electric oven. It is a comfy and simple oven-made green tea that deserves a place in your heart.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eThe purple tea in this sampler is perhaps the greatest curiosity in this line up. Several of the heirloom varietal bushes in the plot directly below our village home \"suffer\" from this natural mutation. The leaves that grow on these buses are dark and almost purpleish when young and tender. The cooperative and farmers thuus avoid these bushes at all cost, as no green tea producer in their right minds would use tea from such a plant to make Maojian. When processed as a white tea, it has a brassy flavor and citrus sour after-taste. Fuzhuan has been the most well known and best selling style of Anhua Heicha for a century now. Past the seven year mark, two of these teas are mellowed but still affordable, while the 2013 brick shows what premium Fu tastes like without its usual sharp edge. The three variations we are offering here, from Easy Tea and Xia-Shang-Zhou, represent two different production philosophies. Easy Tea puts a greater emphasis on more consistent source materials and premium appearance, while Xia-Shang-Zhou emphasizes a natural storage at high elevation without any interest in maximizing the growth of Jinhua fungus. They market their unadorned  Fu as \"原生砖” literally meaning natural brick, describing it as almost closer to Huazhuan in profile. Regardless of the fungus content, all three of these teas have a smoky aroma and refreshing citrus notes.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e\u003cb\u003eSession 2: Dark Horses \u003cbr\u003e\u003c\/b\u003e\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eHeavenly Tips’ relative obscurity is completely undeserved. The dismissal of Flower and Dark Bricks are unequally unfair. Heavenly Tips, the most lightly packed and carefully picked processing style, is usually stored in 50 pound cube-shaped chests called\u003cem\u003e\u003ci\u003e lou\u003c\/i\u003e\u003c\/em\u003e.\u003cem\u003e\u003ci\u003e \u003c\/i\u003e\u003c\/em\u003eIt is not bricked, and as a result it can age more quickly and completely than other processing styles. The resulting flavor profile is the closest thing in Anhua to Ripe Puer. Whatever citrus, sour notes that can come out in the Fuzhuan aren’t here. Instead one gets a thick, chocolaty liquor, and a lingering huigan without overwhelming or immediate sweetness.\u003cstrong\u003e\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eDark Brick and Flower Brick bricks by definition both tend to be tightly packed, and are fully dried before packaging, leaving little time for the famous “jinhua” fungus to grow. The former is usually made from lower-grade shredded leaves, while the latter is made from the higher grade “huajuan” material that used to be made into cylindrical Qianlong tea. Both styles, but Dark Brick especially, are the sturdy bricks that have often made their way onto the international market alongside Hubei’s Laoqingzhuan and Sichuan’s Zangcha. Dark Brick and Flower Brick are the most suited to be boiled and enjoyed as Mongolian style milk tea, but both of the samples we have included can also be enjoyed Gongfu style. The 2019 Flower Brick has some sharpness alongside its woody aroma and watery mouthfeel. The 2017 Dark Brick, which Easy Tea calls “heicha for people who aren’t in the mood for heicha” - is consistently sweet and mellow. a few dozen trees in 2024 and have been buying every leaf for the past few years.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe grade we purchased was from their\u003cstrong\u003e Dashu (or Big Trees)\u003c\/strong\u003e.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe price we paid for this Dashu Lao Ban Zhang was \u003cstrong\u003e\u003cem\u003e6,000 RMB for the KG (about $880 USD)\u003c\/em\u003e\u003c\/strong\u003e, meaning that the wholesale price of this tea from tea farmer to tea company is \u003cem\u003e\u003cstrong\u003e$0.88 per gram\u003c\/strong\u003e\u003c\/em\u003e).\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eKeep in mind that this is not Gushu Lao Ban dogs, as it is wild and powerful in its own right.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe fragrances of this Guafeng Zhai gushu are phenomenal and something that is not present in the other teas.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eYiwu is part of the old famous tea mountains, before the popularity of LBZ and Bingdao and Xigui, Yiwu was the heart of the raw puer buzz.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eWe started sourcing this tea in 2025 and pressed a lot of this into the \u003cstrong\u003eNo Man’s Land tea cake\u003c\/strong\u003e, but we couldn’t do a single origin pressing due to financial reasons.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eHere we can finally offer With tasting notes like cabbage, kale, toasted soy, and pine nuts, this tea has come out as a classic example of what a good oven-roasted, fully mechanized green tea in China now tastes like. The pine needle shape is neither unusually rough nor especially consistent; whatever extra yellowness is perceptible in the dry leaf and wet dreg color is balanced by the sharply fresh aroma, minor astrigency, and light green soup color.
