They store their white tea under wetter conditions than the Yuanming Garden Tea Factory, and rebaked this tea in 2021. An increased moisture content affects flavor in so far as boosting the fruity or chocolatey dimensions of the tea, with the disadvantage of some more tartness than a drier storage would provide. There are a few tell-tale signs that this tea is indeed as old as it claims: First and most apparent is the amount of orange and brown tea buds.  These silver buds are the slowest to transform with time, and only begin to change their color after 7-9 years of age.  The second defining feature is the actual texture of the leaves, as they are handled, they begin to fall apart into powder, this is one of the main virtues of pressing teas like this, for a loose tea of this same age would be all broken bits of leaf and a lot of tea dust.  \u003c\/div\u003e\n\u003cdiv\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003c\/div\u003e\n.\n\u003cp\u003eAs with all our white teas, we brew 6 grams in a 100-120ml gaiwan with water right off the osmanthus shoumei tea biscuit has actual yellow and orange osmanthsu tree flowers in the tea.  The addition of guihua flowers in tea is seen all over China, stretching from this Fuding white tea, to Wuyi black tea, all the way up to Dragon Well Green tea in Hangzhou.  The fragrance of these flowers is unmistakable to one who know them, and they offer a delicate sweetness to any session.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eImmediately upon opening a biscuit, the osmanthus flower fragrance rises off the tea.  When warmed this fragrance is intensified, though pairs well with the more woodsy, pine sap notes of the white tea itself.  The brew is gold and the taste on the tongue is light and impossibly sweet.  As the tea wakes or the 2017 Baimudan, and this is responsible for the tea's sweetness, for a more bud-heavy baimudan would age in a much more spice-laden and vanilla-led way.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe tea brews up in a clean and modestly golden way, with darker tones of reddish hues steeping out if left longer.  The taste is very clean on the tongue for a delicate tea that has been aged so long, giving proof of Qiu's impeccable storage conditions.   The sweet berry taste continues as the mint flavors deepen in the first half of the session. passed its seven-year mark, and it is distinctly different from fresh tea.\u003cspan class=\"Apple-converted-space\"\u003e  This tea represents one \u003c\/span\u003e\u003c\/span\u003eexpression of a white tea that has become 'treasure.'  Since its leaves are much larger while still being connected to fuzzy buds, it is quite different from a 7 year silver needle, or a 7 year years ago, we’ve finally done the walkabout and are ready to admit that other regions can do white just fine. \u003cspan tasted, hands down.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThis year, after tasting and pressing the Kuashan Raw Puer into the Hummingbird cake, we knew we were sold on the month we received a big sample bag of Kuashan white, in fact, after a few infusions we called the farmer and asked for 20kg.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThis has to be the most exciting ‘off-white’ tea we have had since we’ve been drinking tea, and it is just right up our taste-profile alley.\u003cspan Village to check out their grove of Gushu trees (See the NYC Tapwater cake), we passed though the smaller village of Matai, or Horse Terrace.  Lanjie mentioned that this has some of the best white tea in Eastern Lincang and described the thick silver needle, the fuzzy buds, and the melon taste to the tea.  While we skipped pressing it last year in favor of the Kuashan Shoumei material (See the Forbidden Fruit cake), we were excited to get our hands on some of this excellent white tea this year.\u003c\/p\u003e\n\u003cp\u003eAs the leaves are so fuzzy, this tea takes some time to get going, delivering a few lightly colored sweet-water infusions before finding its true stride around the third infusion.   That said, the leaves on the first few infusions smell like walking through a fruit market in spring, there are melon fragrances mixed with mint and thyme, a little sweetgrass and cedar wood mixed in there.  Every time we open the lid of the gaiwan, we can't help but smell the leaves.  As the session progresses, the leaves begin to exude more cracked black pepper and thick rose fragrances.\u003c\/p\u003e\n\u003cp\u003eThe brew begins to thicken up, while remaining a clear pale gold.  After a few infusions, this tea begins to coat the mouth and leaves a pleasant oily sensation on the tongue.  The tea retains a lot of high notes in the mouth despite the heavier What we got from other households were heirloom cultivar leaves at a range of sizes too large to make our intended tea. We then decided to process the tea as if it were shoumei, using the trays and racks usually reserved for red tea production. After almost two weeks of slow browning, we arrived at the following tea. \u003c\/p\u003e\n\u003cp\u003eWith its heavy silver down, the local heirloom cultivar is well suited to be made as a white tea. Compared with Fuding brown shoumei, this tea is somewhat milder, yet still pleasantly sweet. It is a light tea that is good for a late night session, or as a substitute for a sugary drink at work. Wang, or King Peony.  The wrapper design was created by Anj from Gushu Studios, and we are just so in love with it, that we asked if we could use the same art for this beloved tea's re-pressing.\u003c\/p\u003e\n\u003cp\u003eThese changes mean that this new Grandmother Mountain 2.5 is made of tea from a better point of origin, it has been pressed with intentionality in a smaller, more personal facility, and its flavors will change more dynamic over the next few years.  While this tea will start out very fresh and vegetal, in as little as 6 months of aging, the vanilla notes should begin to shoulder aside some of the more green vegetal nature of this young tea.\u003c\/p\u003e\n\u003cp\u003eThe pick of this tea is very bud-heavy with a fair bit of longer stems seen in the cake.  We love seeing these stems as they are what will give this tea its sweetness in the years to come.  If you're not a fan of stems, check out the silver needle, though expect a much more dryness episode about designing tea cake wrappers, he was inspired to make a design and send it to us.  We were enchanted by the bamboo backdrop and the simple tea scene depicted; moreover, we were moved by the realization that tea is for everyone for the elderly, for the youth, for the emperors, for the common person, even for pandas.  We decided calling this tea cake \"Gatekeeper\" to remind us that tea needs no gatekeeping, keep that tea table open to all who would enjoy this most welcoming beverage.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eFor all those who like James have listened to the white tea episodes of Tea Soup, you'll know just why we are so excited to press this gongmei tea cake.  Gongmei used to refer to a specific picking grade of white tea, but in 2018 this all changed, and now gongmei refers exclusively to the local heirloom tea cultivar of Fuding: known alternatively as Tucha, Caicha, or Bendi Cha.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eAfter this regulation came about, a lot of farmers began tearing out their old heirloom bushes to plant row upon row of the more reliable Da Baohao cultivar.  While their number is fewer, the true heirloom tea gardens have not all gone the way of the Dodo, but continue to produce their ancient offerings.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003eThus, this tea cake is made exclusively from the ancestral tea cultivar of Fuding: Gongmei.  When compared world of Fuding White Tea, there has been a great reverence placed upon the village of Panxi, a small area between Fuding proper and Taimushan, a village isolated from the coast by mountains and rented a car and drove up to the cozy little village ourselves this summer searching for some aged panxi white teas.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThis tea comes from a mountain top above Panxi, the Huanggang Village.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe makers have a small, tidy factory and produce and modest amount of tea every year.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eWhile we sampled many aged shoumei teas looking for the perfect ‘7 year treasure’ it was this tea that struck a chord with us.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eAlthough we believe it was made in the ‘brown style’ of processing, and thus lacks some of the higher more vegetal notes found in the green shoumei, it encompasses what we think of when we think of aged white tea.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe leaves are all darkened with age, and even many of the once silver buds are tea of this region today is undebatably underrated. wait. \u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAs a result, Qiu is committed to pushing the pendulum the other way and creating beautifully green white tea that ages slowly but preserves the higher fragrances of white tea.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe methodology is rather simple, instead of allowing heat and moisture to brown the tea, he keeps the withering temperature cool and does a more complete withering and drying phase.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eAs this creates a tea with less moisture content than others, his teas tend to stay greener for longer.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAs a result, this 2016 Baimudan looks incredibly fresh when compared to other “10-year-old” white teas.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe tradeoff is a higher peak on the fragrances and a much cleaner flavor on the tongue.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eWe sampled a lot of material before pressing this cake and decided on it because it represents a different and less often seen side of the aged white tea market, slow and deliberate transformations over intense visual transformation.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eWhile we find merit in both camps, this cake represents an interesting insight into what a dry and clean white tea will become after 10 years of air-tight, low moisture aging conditions.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe leaves exude potent floral fragrances when added to a warmed gaiwan with spicy vegetal notes of vanilla and cream.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eWhen infused, the aged fragrances of butter and dried flowers become more pronounced.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThe brew itself is a rich gold that is pleasantly thick on the tongue and coats the mouth.\u003cspan class=\"Apple-converted-space\"\u003e  \u003c\/span\u003eThere is a pleasant sweetness which was once vegetal in the tea’s youth but now has transformed to a soft creamy floral sweetness like spring violets and honeysuckle.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eAs the brews progress, the dried flower notes peak on the leaves around the third or fourth infusion, while the brew itself thickens up into a huigan-inducing brew before tapering back off into sweet flower water.\u003c\/p\u003e\n\u003cp\u003eThis tea brews well at boiling temperatures, but also changes in texture and flavors as the kettle water cools. \u003c\/p\u003e\n\u003cp\u003eWe recommend brewing this tea in a gaiwan or porcelain teapot.  Our brewing ratio is typically 6 grams of tea to 100-120ml of water in flash-fast infusions.  We enjoy using boiling water when brewing our whites, but experimenting with cooler temperatures can create a more textured cup of tea.
