Yellow Teas
Ever since arriving in China in 2016, we have been on the look out for authentic yellow (semi-fermented) teas. This traditional way of processing green teas into a category of tea completely unique is a dying art. As the years go by, fewer and fewer Chinese farmers are willing to risk making an off-tasting, mellowed, and piled batch of yellow tea, resulting in much of the putative yellow tea on the domestic market today tasting much more akin to slightly-off green teas. Never fear though, after many years of searching, we have finally found what can be considered the closest approximation of a yellow tea feared lost to time: Huoshan Yellow Bud.
