Type: White Tea
Harvest: Spring 2022
Press Date: Spring 2023
Region: Bailing, Fuding, China
Producer: Master Zhang
Tasting Notes: Graham crackers, sugar cookies, fresh bread, vanilla cream, sweet violets
The 2022 baimudan was one of the most well-received teas we have ever released. So many people reached out directly to us about how special this one tea was, that we decided to press a small batch of 2022 baimudan for posterity’s sake.
This bud-heavy King Peony is also wild-harvested, meaning that the garden has been left unpruned for many years now, creating long spindly tea bushes instead of the common knee-high bushes we see in much of the tea world.
The buds and few leaves of this loosely-pressed cake separate easily from the whole to the extent that we rarely have to use a tea pick to pull off a tea-session’s worth of tea. The leaves in the warmed brewing vessel remind us of sugar cookies and fresh baked bread with a rich cinnamon aroma lingering in the background.
The brews are light and warm, redolent of vanilla, cream, and something sweetly floral. This tea brews well at boiling temperatures, but also changes in texture and flavors as the kettle water cools. This tea is just so lovely during the summer months that we’re already drank thought half a cake at the time we are writing these tasting notes for the site.
It really is a luxury daily drinker!
We recommend brewing this tea in a gaiwan or porcelain teapot. Our brewing ratio is typically 6 grams of tea to 100-120ml of water in flash-fast infusions. We enjoy using boiling water when brewing our whites, but experimenting with cooler temperatures can create a more textured cup of tea.

fuzzy buds
the amount of buds in this tea is incredible! lightly pressed, intact leaves that make for a sweet and bright brew! very enduring and super tasty - wish I got a cake of this before it sold out
Lives Up to Its Name
This is a super comforting white tea, with a persistently sweet aftertaste. Incredible longevity...infusion after infusion, all day long. Easy cake to pull out exactly the amount you want, with whole leaves largely intact.
Marvelous tea
